Intense and fruity oil, obtained only from Nocellara Etnea, autochthonous variety of Etna volcano area, from old olive groves grown on volcanic soil.
Harvest
Hand picking. From the 15th of October to the 15th of November.
Aspect
Green with golden shades.
Smell
Intense and fruity with hints of freshly cut grass, cardoon and green almond.
Flavour/Aroma
Persistent bitter and spicy in balance with the fruity notes.
Uses
Seafood appetizers, grilled vegetables, grilled cuttlefish, fresh goat cheese.
