Primo is produced on the Hyblaean Mountains (south-eastern Sicily) from old P.D.O. certificated plants grown at 350-450m above sea level in a hillyland facing South territory. Variety 100% Tonda lblea.
Harvest
Hand picking. From the 15th September to the 30th of October.
Aspect
Brilliant green.
Smell
Balanced fruity with pronounced notes of green tomato, freshly cut grass and aromatic fresh herbs.
Flavour/Aroma
Full-bodied, with a bitter and a spicy well balanced note, green tomato flavour and fresh herbs.
Uses
Grilled meats and fish, soups and salads, bruschetta, raw on green and grilled vegetables.
