An oil obtained only from the best cultivars, Moresca, Biancolilla, Nocellara, Cerasuola and Tonda Iblea. From young olive groves in hilly and flat areas, close to the Mediterranean sea.
Harvest
Hand and mechanical harvesting. From the 1st of November to the end of production.
Aspect
Green with golden shades.
Smell
Medium fruity intensity with pronounced notes of artichoke, freshly cut grass, green almond and red tomato.
Flavour/Aroma
Full-bodied, with bitter and spicy well balanced notes, flavour of artichoke and oregano.
Uses
Marinated fish, mushrooms, salads, soup and delicate grilled red meats. Good for cooking every recipe of Mediterranean cuisine.
