The Tonda Iblea olive variety, one of those that gives life to the prized Monti Iblei PDO, is typical of the vast limestone plateau of south-eastern Sicily which is also our home. We are in the hinterland of the provinces of Syracuse and Ragusa: here, olive trees of this variety have grown spontaneously for millennia among vast plateaus and deep valleys. Centuries-old plants are predominant and alternate with new plants, covering the hills together with carob trees, almond trees and vines. The trees are very vigorous with generally very dense foliage. The fruit has an excellent ratio between stone and pulp and productivity is medium. The fruit is large and fleshy.
