Secrets of Sicily Pasta

Our pasta is made from ancient Sicilian durum wheat flour ground to stone with spring water from natural mountain sources. It is bronze drawn and dried naturally. It has an excellent protein content and a raw appearance that perfectly retains any seasoning.

Artisanal Sicilian semolina pasta — Segreti di Sicilia

Segreti di Sicilia artisanal pasta is made with 100% Sicilian durum wheat semolina, bronze-drawn and slow-dried at low temperatures. This pasta holds its shape during cooking, absorbs sauces well, and has a rich wheat flavor.
The shapes are traditional Sicilian: busiate, a typical Trapanese pasta in the form of an elongated spiral, ideal for Trapanese pesto and fish sauces; organic semolina tagliatelle, versatile and suitable for meat and vegetable sauces; and anelletti, the typical Palermitan shape used in baked timballo.
Bronze drawing ensures a rough surface that retains sauce better than industrial Teflon-drawn pasta. Slow drying preserves the wheat's aromatic profile, resulting in a fuller flavor compared to industrial pastas.
