Blend of Moresca, Biancolilla and Nocellara varieties, harvested in south-eastern Sicily at 200-400 meters above sea level, from young olive groves in hilly and flat areas close to the sea. With added natural lemon flavour.
Collection
Hand and mechanized picking. From November 1st to 15th.

Extraction
Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled "cold" temperature (<27°C).

To this blend we add the natural lemon flavor to allow for the most varied and imaginative uses in the kitchen.

This particular oil reveals a medium fruity aroma with natural lemon notes, a full-bodied aroma with very balanced bitterness and spiciness and an evident, unmistakable lemon taste. This characteristic makes it a versatile product in the kitchen that can be used for unusual preparations. For example, it can be used in the preparation of desserts to replace fats of animal origin and, at the same time, give the characteristic lemon scent.
