Monocultivar Biancolilla PGI is the extra virgin olive oil obtained from Biancolilla olive groves, a typical variety of western Sicily. It is one of the many native Sicilian cultivars and one of the most valuable for the production of extra virgin olive oil.

The Biancolilla variety gives life to a very aromatic extra virgin oil. It is considered one of the oldest and best preserved varieties of all the native cultivars in Italy.

Monocultivar Biancolilla PGI is a medium fruity extra virgin olive oil with predominant notes of artichoke and green almond. It is slightly bitter and has a pronounced spiciness capable of enhancing every dish in a delicate way.

    Origin
    Produced in Italy. Monocultivar Biancolilla is a medium-fruity oil obtained from Biancolilla, the typical variety of central-western Sicily (Ribera and Caltabellotta). From olive groves facing south, at an altitude of 150-250 meters.

    Extraction
    Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled "cold" temperature (below 27 degrees)

  • How Monocultivar Biancolilla came to be

    Monocultivar Biancolilla is produced from the olives of this typical Sicilian variety, Biancolilla. The tree is very hardy and has a high yield, which is why it is widely used for oil production. Its particular name comes from the fact that the fruits, during ripening, change from very light green to purplish. In nature, it also thrives in very arid territories thanks to the characteristic of its roots: they spread very deep, allowing them to reach the necessary nutrients.

From the Biancolilla variety a very fine extra virgin olive oil is obtained which contains various hints of typically Sicilian fruit and vegetables, medium-light fruity, floral notes of tomato and artichoke, green grass and green almond. Well balanced bitter and spicy flavour. In the kitchen, this oil lends itself to various uses both as a condiment and as an ingredient, even in the preparation of desserts. In fact, it effectively replaces other less valuable fats such as butter and seed oil.

The quality of our Monocultivar Biancolilla begins in the field but is refined in the mill thanks to our incessant research work. By combining study and experience, we have in fact created an innovative system that allows us to set, and therefore manage, every single process of the production plant according to a customized (secret) "recipe" for each cultivar, origin, and state of ripeness. This way, we can standardize and enhance the organoleptic properties of each olive variety, extracting only the best from each and thus creating our special blends.

The olive at the base of our Monocultivar Biancolilla is used almost exclusively to obtain precious monovarietal extra virgin oils or blends from its pressing. The trees are vigorous, and the centuries-old ones are majestic, with a very wide trunk and a canopy that tends to grow in height and width, even if in a disorderly and unharmonious manner. The fruit is not very large, with an almost elliptical shape, a pointed top, and a rounded base. It is a variety that produces biennially and guarantees an average yield of at most 20%, probably due to the fact that the fruit pulp is not very consistent.

Our Monocultivar Biancolilla oil is produced in our facilities using olives sourced from our network of suppliers in the Ribera and Caltabellotta areas. We only work with growers who can provide high-quality local raw materials, cultivated organically. Above all, we support small-scale production: we maintain an intrinsic connection with the local community of olive growers and small producers who bring the best of their produce to our mills. This is part of our commitment to sustainable development and adds significant value to the local area.

Monocultiva Biancolilla PGI can be recognized by the specific brand on the packaging. It guarantees that the oil has been produced according to the specifications established by the "Consortium for the valorisation and protection of extra virgin olive oil PGI Sicily". In addition to the high quality standards (the same ones we follow for all our products), the specification requires that the oil be pressed within the Sicilian territory and only from olives grown on the island. A standard that we also follow for all the other extra virgin olive oils we produce.
