What is meant by wild fennel seeds?

In Sicily, wild fennel seeds are used in many preparations. Traditionally and still today they are the main ingredient of the sausage that is prepared in the eastern part of the island and of the poor sauce, what we call "farmer's" because combined with the tomato it recalls the flavor of the sausage. It is also used for sweet preparations, for example particular traditional egg biscuits and a fine alcoholic infusion.

How is wild fennel herbal tea prepared?

Thanks to its carminative properties, wild fennel seeds are used for decoctions and herbal teas capable of calming muscle spasms and heartburn. Just infuse them in boiling water for a few minutes. The same properties can be exploited in summer thanks to the preparation of aromatic waters to be sipped cold. For example, prepare with an infusion of mint, ginger and lemon zest together with fennel seeds.

How is herbal salt prepared?

Sea salt is flavored with the addition of spices and dried herbs. This mixing allows you to add taste and flavor to dishes without having to add quantities of salt. We follow a family recipe that allows us to respect the right proportions between salt and aromas and we only use strictly Sicilian, zero kilometer herbs and spices.
