    Origin
    Produced in Italy. Mille is an oil produced from centuries-old wild olive shrubs that grow spontaneously on the banks of streams and streams, at 450 meters above sea level, in the Iblei Mountains area (south-eastern Sicily).

    Extraction
    Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled "cold" temperature (max. 27 degrees)

    Perfume
    Fresh and very intensely fruity, with notes of green almond, thistle, fresh wild grass, freshly cut grass, chicory and fresh aromatic herbs.

    Flavor / Aroma
    Full-bodied with a pronounced and persistent bitterness and spiciness, presence of herbaceous notes, chicory and almond return in the mouth.

    Use
    A few drops on legume soups, in emulsion with balsamic vinegar for vegetable dips. As a hydrating oil on the face and body (due to its very high polyphenol content)

    Mille Frantoi Cutrera extra virgin olive oil comes from the fruits of wild olive shrubs that grow spontaneously on the banks of streams and streams, at 450 meters above sea level, in the Monti Iblei area, in the south-eastern part of Sicily. In cultivation, these shrubs are often left aside because the fruits have a very low oil yield and it is not convenient to harvest them. Typically, around 18 kilos of these olives are needed to obtain a single liter of oil.

The extra virgin olive oil rich in polyphenols and its uses

Despite its low yield, pressing wild olive olives has advantages: the oil obtained has a much higher content of natural antioxidants than other oils, especially phenolic compounds and vitamin E. In fact, its uses are so many. In the kitchen it can be considered a real nutraceutical, that is, a nutritional food with healthy properties. But it is also recommended for cosmetic uses, for example as an emollient and nourishing substance for the skin with anti-aging properties. Its use is even recommended for rheumatic pain and as an antiseptic.

The quality of our Mille oil is given to us by nature. But we refine it in the oil mill, thanks to our incessant research work. By combining study and experience, we have in fact created an innovative system that allows you to set, and therefore manage, every single process of the production plant based on a (secret) "recipe" personalized by cultivar, origin and state of ripeness. Thus we can standardize and enhance the organoleptic properties of each olive variety, drawing only the best from each and thus creating our special blends.

The wild, uncultivated olive tree is defined as olivastro. It often has the appearance of a shrub although older specimens can reach enormous dimensions. The olives are very small and the leaves are more dull than sharp. These plants grow spontaneously in all areas where the olive tree is present. In Sicily it is often found on the banks of streams and streams.

The trunk of this tree is often very twisted and may have cavities. The bark is grey, very smooth when the plant is young. The branches are many and often, especially in young olive trees, rich in thorns. The leaves have a sage green type color

Mille extra virgin olive oil from wild wild olive has a high content of monounsaturated fats which makes it beneficial and protective for health. Furthermore, Mille has a higher content of sterols, tocopherols (vitamin E), carotenoids and polyphenols compared to other oils. It is precisely for this reason that its flavor is much more bitter and spicy. These substances have been widely studied by the scientific community for their antioxidant capacity.
