    Our Sugo alla Norma with aubergines fried in extra virgin olive oil is produced from Sicilian aubergines fried in Frantoi Cutrera extra virgin olive oil. These are then cooked with tomato sauce in a low pressure pan to preserve the organoleptic characteristics of the raw materials. The sauce has an intense red color, with aromatic notes of tomato and aubergine. The velvety consistency alternates with the fleshiness of the aubergine pieces. The flavor is sweet and slightly spicy.

The aubergine has many organoleptic properties that the typical Sicilian recipe, Norma, tends to enhance. Respecting tradition and the quality of the raw material, we fry our aubergines only in Frantoi Cutrera extra virgin olive oil, cooked in a low pressure pan to preserve the characteristics and natural aromas of the product.

Segreti di Sicilia's Sugo alla Norma with fried aubergines in extra virgin olive oil can be consumed plain, without further processing. Just heat it for two minutes in a saucepan over low heat and season the pasta directly on the plate. To be finished only with a drizzle of extra virgin olive oil and grated salted ricotta.

The recipe is typical of the city of Catania but the origin is not certain. There are two most accredited versions. The first traces the name of the recipe to the work of the same name by Vincenzo Bellini, the famous composer from Catania: the recipe was apparently developed by a Sicilian chef on the occasion of the celebrations for Norma (1831), the composer's opera. The second version instead traces the origin to an exclamation of the Sicilian playwright Nino Martolgio: in front of a dish seasoned with tomato sauce and fried aubergines he seems to have exclaimed "This pasta is a norm" to indicate that it was prepared according to the rules art or, perhaps, referring to the beauty and perfection of Bellini's work of the same name.

According to our traditional recipe, Norma sauce is prepared starting from fried aubergines cooked in tomato sauce together with other Sicilian herbs and ingredients such as basil and chilli pepper. You can prepare the Norma sauce also starting from a base such as our ready-made organic cherry tomato sauce and one of our excellent Frantoi Cutrera extra virgin olive oils.
