  • How Segreti di Sicilia tuna fillets are produced

    The manufacturing process is artisanal, still entirely manual: after cutting into slices and cooking in water and salt which allows the organoleptic and nutritional characteristics of the fish to be preserved, we proceed with the skinning and removal of the bones. The cleaned slices are cut into fillets and placed in jars which are filled with Frantoi Cutrera extra virgin olive oil. We choose the Nocellara monocultivar because its light and fragrant fruitiness enhances the delicate flavor of the tuna fillets. The final flavor of the fillets is so fresh and balanced, the color remains light pink and the consistency meaty.

  • Frantoi Cutrera extra virgin olive oil from preservative to condiment

    Frantoi Cutrera extra virgin olive oil, Nocellara monocultivar, is the most suitable for the preservation of tuna fillets which are enhanced by its aromatic notes. Storing in glass allows this light fruity oil to absorb the taste of tuna. The result is an intense and tasty condiment which, after having performed its natural function as a preservative, can be reused as a gourmet condiment for salads, pasta first courses and sandwiches.

For our tuna fillets we choose the yellow fin variety because its meat lends itself well to preservation in oil. We choose this product only from safe and reliable partners who can ensure sustainable and respectful fishing. Yellowfin tuna has excellent nutritional characteristics: it is very rich in noble proteins and Omega 3 and Omega 6 acids useful for antioxidant and anti-cholesterol functions.

Tuna fillets in Frantoi Cutrera extra virgin olive oil are ready to eat. Just let them drip lightly and place them on a crouton of freshly toasted bread or crumble them over a green salad, couscous or a pasta or cereal salad.

We recommend consuming tuna fillets in oil as they appear, naturally and with their own preservation oil. However, they can also be used in the kitchen for the preparation of quick dishes: for example, with rice and ricotta to create delicious croquettes, in vegetable fillings such as courgettes or peppers together with breadcrumbs, or in salads with cannellini beans and onions.

Once opened, the jar of anchovy fillets should be placed in the refrigerator where it can remain for a few days. But under one condition: the fillets must remain strictly below the oil coverage level so that the texture and flavor remain intact.
