  • How the Segreti di Sicilia extra cherry tomato jam is produced

    Our extra cherry tomato jam is produced from Sicilian cherry tomatoes. We work it with a low temperature cooking process that allows us to keep the taste, intense color and properties of the tomatoes intact. The jam has an intense red color with light aromatic notes of tomato. The consistency is thick and creamy. The flavor is balanced in terms of sweetness thanks to the use of cane sugar.

The Cherry tomato, a typical Sicilian variety, while maintaining the same nutritional virtues of the classic tomato, has a greater concentration of flavor and freshness. This fruit is very rich in mineral salts, especially zinc, copper, calcium, phosphorus and potassium. Among the vitamins, especially those of group A and group B are included. Carotenoids, which are also preserved very well in the cooked product, together with vitamin C prevent the formation of bad cholesterol.

The Segreti di Sicilia extra cherry tomato jam is perfect in combination with cheeses, especially fresh and soft goat's or cow's milk cheeses. Or as an accompanying sauce for cooked vegetables or meat main courses. Its use is also interesting in gourmet sandwiches, for example with hamburgers and cheeses or for original bruschetta.

Generally, sweet and creamy cheeses go well with compotes and jams with a sour flavour, while sweet compotes and jams go better with mature ones. For example, soft, sweet and fresh cheeses such as ricotta and robiola go well with acidic jams such as lemon, orange and mandarin jams, or berry jam. Hard and mature cow's milk cheeses such as Grana Padano or Parmigiano Reggiano go well with pear jam, goat's cheese with raspberry, fig and apricot jam or orange and mandarin jam, pecorino cheese with lemon jam and tomato or onion.

According to our traditional recipe, tomato jam is prepared by cooking the tomatoes just like they were fruit, that is, at a low temperature, with the addition of sugar and gelling agent.
