Cutrera PGI Sicilia is produced from Biancolilla olives, a variety typical of western Sicily, and Nocellara del Belice, instead typical of central-eastern Sicily. Two native and valuable varieties which together represent the entire "character" of the island.

    Origin
    Produced in Italy. Cutrera PGI Sicilia is obtained from the Biancolilla and Nocellara del Belice varieties. It comes from olive groves at 150-350 meters above sea level, facing south, in western and central eastern Sicily.

    Extraction
    Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled "cold" temperature (below 27 degrees)

  • How Cutrera PGI Sicilia was born, the best blend of Sicilian extra virgin olive oils

    The Cutrera PGI Sicilia blend is produced from two special varieties. Biancolilla is the native variety of Val di Mazara, in western Sicily. It is a very rustic cultivar that produces a medium-light fruity oil characterized by aromatic notes of artichoke and fresh grass. The other variety at the base of Cutrera PGI Sicilia is Nocellara del Belice, typical of the central part of the island. Its large fruits with crunchy pulp produce an oil with a very intense fruitiness and strong sensations of bitterness and spiciness.

The union of the oils produced by these two cultivars, Biancolilla and Nocellara del Belice, produces a very balanced blend. The result is a medium intensity oil with floral notes of artichoke, freshly cut grass and fresh aromatic herbs, an intense aroma and a persistent spiciness. The quality of our Cutrera PGI Sicilia is born in the field but is refined in the oil mill thanks to our incessant research work. By combining study and experience, we have in fact created an innovative system that allows you to set, and therefore manage, every single process of the production plant based on a (secret) "recipe" personalized by cultivar, origin and state of ripeness. Thus we can standardize and enhance the organoleptic properties of each olive variety, drawing only the best from each and thus creating our special blends.

Cutrera PGI Sicilia best expresses the characteristics of the two cultivars from which it is produced, Biancolilla and Nocellara del Belice. The Biancolilla variety trees are majestic and the fruits are used only for oil production. The name derives from the fact that during the ripening period the fruits change from green to whitish before becoming purple. The Nocellara del Belice cultivar, however, is excellent both for oil production and as a table olive, thanks to the fact that the fruits are large and fleshy. The variety is also known as Mazara or Castelvetrano olive, its areas of choice.

Cutrera PGI Sicilia oil is produced in our factories from olives that arrive from our network throughout Sicily. We only promote suppliers capable of providing high quality local raw materials, grown organically. And above all, we support small production: we maintain an intrinsic bond with the local community made up of olive growers and small producers who give our mills the best of their production. With a view to sustainable development and with an important added value for the territory.

Cutrera PGI Sicilia can be recognized by the appropriate brand on the packaging. It guarantees that the oil has been produced according to the specifications established by the "Consortium for the valorisation and protection of extra virgin olive oil PGI Sicily". In addition to the high quality standards (the same ones we follow for all our products), the specification requires that the oil be pressed within the Sicilian territory and only from olives grown on the island. A standard that we also follow for all the other extra virgin olive oils we produce.
