Monocultivar Moresca IGP is the extra virgin olive oil obtained from centuries-old Moresca olive groves in the Noto area, in south-eastern Sicily. It is a variety typical of various areas of Sicily and expresses the island territory well.

The Moresca variety gives life to an extra virgin oil whose intensity depends on the time of harvest. The greener the fruits, the stronger this intensity. We manage to obtain the right balance by constantly monitoring the degree of ripeness of the olives.

Monocultivar Moresca IGP is a delicate and fruity oil in which bitter and spicy are only slightly present and in a very balanced way. This makes it the perfect condiment for fish crudités, fried calamari, steamed fish, delicate salads and seafood salads.

    Produced in Italy. Monocultivar Moresca PGI is obtained from the Moresca variety, harvested in the Noto area, in south-eastern Sicily, from centuries-old olive groves facing south, at 450-550 meters above sea level.

    Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled "cold" temperature (below 27 degrees)

  • How Monocultivar Moresca PGI was born

    Monocultivar Moresca IGP is produced from the olives of this typical Sicilian variety, the Moresca, which is also suitable for table consumption. The fruit is large (and asymmetrical) and is characterized by the fact that it changes from green to black early when ripe.

A special extra virgin olive oil

The extra virgin olive oil obtained from the Moresca variety is medium fruity. On the nose it brings out herbaceous sensations, that is, of green grass and freshly cut grass. The degree of bitterness and spiciness are present in a light manner and are balanced by a sweet note which is characteristic of this monocultivar.

The quality of our Monocultivar Moresca IGP is born in the field but is refined in the oil mill thanks to our incessant research work. By combining study and experience, we have in fact created an innovative system that allows you to set, and therefore manage, every single process of the production plant based on a (secret) "recipe" personalized by cultivar, origin and state of ripeness. Thus we can standardize and enhance the organoleptic properties of each olive variety, drawing only the best from each and thus creating our special blends.

Monocultivar Moresca PGI best expresses the characteristics of the variety from which it is born, the Moresca olive. It is an indigenous Sicilian cultivar which is widespread especially in the central and eastern areas of the island. Moresca trees, with their typical open and thinning foliage, mainly cover the countryside of the provinces of Caltanissetta, Enna, Catania, Syracuse and Ragusa.

Monocultivar Moresca PGI oil is produced in our factories starting from olives that arrive from our network of suppliers in the Noto area. We only promote growers capable of providing high quality local raw materials, grown organically. And above all, we support small production: we maintain an intrinsic bond with the local community made up of olive growers and small producers who give our mills the best of their production. With a view to sustainable development and with an important added value for the territory.

Monocultivar Moresca PGI can be recognized by the appropriate mark on the packaging. It guarantees that the oil has been produced according to the specifications established by the "Consortium for the valorisation and protection of extra virgin olive oil PGI Sicily". In addition to the high quality standards (the same ones we follow for all our products), the specification requires that the oil be pressed within the Sicilian territory and only from olives grown on the island. A standard that we also follow for all the other extra virgin olive oils we produce.
