Primo was the first Sicilian extra virgin olive oil to obtain the Monti Iblei DOP (Controlled Origin) certification. Today, it is one of the most sought-after and prized. Because in the kitchen, more than a condiment, it can be considered a true food: it is an intense, robust, and fragrant oil, suitable for hearty first courses, meats, and legumes. It enhances grilled fish, soups and salads, bruschetta, and Caprese salad. And its intensity defines the destiny of every dish.

    Origin
    Made in Italy. Primo DOP is produced on the Iblei Mountains, at 350-450 meters above sea level, from centuries-old DOP certified olive groves. facing south. Mainly Tonda Iblea variety.

    Extraction
    Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled "cold" temperature (below 27 degrees)

    Our Primo DOP monocultivar extra virgin olive oil contains its own history in its name. It is obtained from the olives of the first harvest of the year, it was our first oil to be awarded back in 2001 and it was the first Monti Iblei DOP certified extra virgin olive oil. Precisely thanks to our long work of experiments in the field and in the oil mill it was possible to start the process for the recognition of what is today considered one of the most valuable and sought after Sicilian PDOs.

Over 170 awards in just over 20 years

Our Primo PDO has been on the podium of the main national and foreign competitions for over 20 years and has collected around 170 awards from 2001 onwards. Constantly present in the prestigious FLOS OLEI guide which monitors the best extra virgin olive oils at an international level. Always a finalist in the prestigious Ercole Olivario competition and winner several times in the various categories. He obtained first place in 2019 at the Sol d'Oro of the Sol salon in Verona where every year he is a regular guest in the final selection phases. Primo PDO has reached the finals and won at least once all the national and international competitions dedicated to olive oil excellence. From the Olive Oil Competition in Los Angeles to the Feinschmecker Olivenöltest - Olio Award in Zurich. Furthermore, it is always reported in the main gastronomic guides, such as Slow Food and Gambero Rosso which also awarded us the prestigious Star for having obtained the Tre Foglie quality for ten consecutive years.

The Tonda Iblea olive variety, one of those that gives life to the prized Monti Iblei PDO, is typical of the vast limestone plateau of south-eastern Sicily which is also our home. We are in the hinterland of the provinces of Syracuse and Ragusa: here, olive trees of this variety have grown for millennia among vast plateaus and deep valleys. Centuries-old plants are predominant and alternate with new plants, covering the hills together with carob trees, almond trees and vines. Together with the Moresca, another typical variety of this territory, the Tonda Iblea dominates this territory and produces an oil with a balanced, rich and tasty flavour, intense and persistent, with an unmistakable hint of tomato and fresh grass.

Tonda Iblea olive trees are generally large and vigorous, with dull gray leaves. The fruits are large (weighing on average 6 grams) and have a good ratio between pulp and stone, in fact the oil yield is good. For a long time this olive was used as a table product. The fine oil obtained has an intense fruitiness and a bouquet of various scents, from tomato to cut grass. It is rich in polyphenols and vitamin E.

The Monti Iblei PDO is produced in the eastern part of Sicily, in particular in the provinces of Ragusa and Syracuse. At least 80% must be obtained from the Tonda Iblea, Moresca, Nocellara Etnea, Verdese, Biancolilla and Zaituna varieties, even combined with each other. Other varieties may be present but for no more than 20%.

The Monti Iblei DOP can be recognized by the appropriate mark on the label (the DOP community mark - Protected Designation of Origin). It is the only guarantee of a product made following precise specifications, subjected to numerous traceability checks and the appropriate organoleptic analysis defined by the official panel.
