  • How PanPrimo Colomba Segreti di Sicilia is produced

    Our PanPrimo colomba was born from the collaboration between two companies of Italian excellence, Frantoi Cutrera for extra virgin olive oil and Pasticceria Filippi for the artisanal production of the most classic of Christmas desserts. PanPrimo is therefore a dove with extra virgin olive oil. The dough is traditional: we use the best selection of flours, natural yeast from Pasticceria Filippi which has been cared for and regenerated for more than 50 years and the excellent Primo Frantoi Cutrera extra virgin olive oil. Then: very high quality candied fruit, organic cane sugar and eggs from free range hens. Leavening takes place for approximately 7-8 hours at 29-30 °C. The dessert has a soft and spongy consistency on the inside and crunchy on the outside.

    The ingredient that characterizes PanPrimo is Primo, the monocultivar DOP extra virgin olive oil obtained with 100% Tonda Iblea olives, a native variety of the Iblei Mountains, in south-eastern Sicily. It is the flagship Frantoi Cutrera brand, always at the top of the rankings of the main national and international competitions on extra virgin olive oil. It is an intense, robust and highly fragrant oil that gives PanPrimo, the colomba, a particular aroma and extreme softness.

Our Segreti di Sicilia line of preserves was born from the love for this land and its traditions, from the scents of our childhood, from our grandmother's secrets and from the rediscovery of an authentic and genuine past. Each product speaks of a specific territory, of a biodiversity that the world envies us. We choose each of them from our own crops or from our network, small and local productions and farmers who work the land with the same passion and respect as in the past. These genuine products are then transformed in our modern canning plant with the help of latest generation machinery. We use innovative preparation techniques that guarantee absolute respect for the original recipe and, at the same time, the preservation of all the organoleptic characteristics of the fresh product and its main nutritional aspects. The absence of preservatives and colorings allows you to taste a genuine product.

The origin of the dove is disputed. On the one hand it is rooted in legend and on the other in marketing. In fact, it seems that the Lombard king Alboin, when he conquered the city of Pavia after a long siege in 572 AD, received a dove-shaped bread from the people as a sign of peace. The colomba as a modern Easter dessert, however, was born in 1930, in Milan, from the intuition of Dino Villani, advertising director of Motta, the famous Milanese sweet factory Motta.

Compared to the doves produced by the food industry, the artisanal ones, made by small producers and master pastry chefs, are generally characterized by greater research into raw materials, the original recipe and non-standardised processes. This allows us to have non-standard but always different products whose quality depends not only on the choice of ingredients but also on the wisdom and knowledge of the pastry chef.

We prepare the PanPrimo colomba using a traditional method and an artisanal dough. We mix the best flours with the highest quality ingredients such as eggs from free-range hens, Italian candied fruit and almonds and a regenerated sourdough starter that has been regenerated for more than 50 years. The most important ingredient is our Primo DOP Frantoi Cutrera extra virgin olive oil which gives the panettone a particular softness.
