Monocultivar Cerasuola IGP is the extra virgin olive oil obtained from Cerasuola olive groves, a variety typical of various areas of Sicily, especially the central and western area. Those used for our oil come from the Sciacca area, near the sea and its organoleptic characteristics take advantage of this fortunate geographical position.

The Cerasuola variety is the origin of a medium fruity extra virgin olive oil with typical hints of ripe tomato, thistle, almond and thyme which also give particular aromatic notes.

Monocultivar Cerasuola PGI is an extra virgin olive oil with a high content of beta-carotene and other noble substances with strong nutritional qualities. On the palate, bitter and spicy are persistent but in a balanced way and allow the aromatic notes to stand out. At the table it goes well with legume soups, roast meats, mature cheeses and grilled red meats.

    Origin
    Product of Italy. Monocultivar Cerasuola is a medium fruity oil, obtained from Cerasuola olives, a typical variety from west-central Sicily (Sciacca area). From olive groves facing south, at an altitude of 100-200 meters.

    Extraction
    Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled "cold" temperature (below 27 degrees)

  • The Origins of Monocultivar Cerasuola

    Monocultivar Cerasuola IGP is produced from the olives of this typical cultivar from the western part of the island. Those at the base of our oil come in particular from the Sciacca area where the variety is also known by the name of Purritara. It is a very drought-resistant plant and capable of thriving even in very nutrient-poor soils. The care we take of these trees today allows us to combine these great resistance characteristics with a very high quality yield.

The extra virgin with a strong character

Another fine Sicilian DOP oil is obtained from the Cerasuola variety. Its fruitiness is medium or intense, it gives hints of fresh grass and sometimes also of ripe tomato, almond and thistle, it depends on the areas of origin and the degree of ripeness. If ripe, in fact, these olives produce an oil with a very intense fruitiness and aromas of ripe tomato and thyme. Bitter, sweet and spicy are well balanced.

The quality of our Monocultivar Cerasuola begins in the field but is refined in the oil mill thanks to our relentless research. By combining study and experience, we have in fact created an innovative system that allows us to set and, consequently, manage every single process of the production plant according to a personalized (secret) "recipe" for each cultivar, origin, and state of ripeness. This way, we can standardize and enhance the organoleptic properties of each olive variety, extracting only the best from each and thus creating our special blends.

Cerasuola variety plants are vigorous, with large branches that tend to extend upwards and dense foliage. Cerasuola olives are large (they can weigh more than 7 grams) and have an elliptical shape with a round apex and a rounded base. When ripe they take on a characteristic black-purple color with many lenticels on the surface. The fruitiness of the oil obtained is marked and has a characteristic scent of ripe tomatoes. The qualitative properties in this variety are preserved for a very long time.

Monocultivar Cerasuola olive oil is produced in our facilities using olives sourced directly from olive groves within our network, located in the Sciacca area. We only promote growers who can provide high-quality local raw materials, cultivated under organic farming methods. Above all, we support small-scale producers: we maintain an intrinsic connection with the local community of olive growers and small producers who supply our mills with the best of their harvests. This approach fosters sustainable development and adds significant value to the region.

Monocultiva Cerasuola PGI can be recognized by the specific brand on the packaging. It guarantees that the oil has been produced according to the specifications established by the "Consortium for the valorisation and protection of extra virgin olive oil PGI Sicily". In addition to the high quality standards (the same ones we follow for all our products), the specification requires that the oil be pressed within the Sicilian territory and only from olives grown on the island. A standard that we also follow for all the other extra virgin olive oils we produce.
