  • How is black olive bruschetta pâté produced?

    The Bruschetta paté of black olives is produced from a base of black olives, Nocellara variety, which are ground at very low temperatures in order to preserve the characteristics and natural aromas present in the fresh product. In the recipe we then add Frantoi Cutrera monocultivar Nocellara extra virgin olive oil, oregano, parsley, chilli pepper and salt. This original pâté has intense aromatic notes of black olives, a dense and creamy consistency and an intense flavour.

Nocellara olives, a native Sicilian variety, are particularly rich in easily digestible fiber which helps to regulate the functioning of the intestinal system. Furthermore, thanks to the presence of Vitamin E, beta-carotene and antioxidants, they help fight free radicals, reduce bad cholesterol and blood pressure, preventing cardiovascular diseases.

Our Segreti di Sicilia black olive bruschetta is a real pâté and as such can be used as an appetizer, for example spread on toasted bread or as a base for tasty bruschetta (hence the name). But it is also excellent as a condiment for pizza or gourmet sandwiches, paired, for example, with soft cheeses and caramelized onions.

The black olive pâté is perfect as it is, even tasted with just a breadstick. But, as an ingredient, it lends itself to many other uses in the kitchen. You can even put it on pasta to make, for example, "pasta alla ash" (in this case the pâté is diluted with gorgonzola cheese and a little fresh liquid cream). There are also more original uses: for example in bread dough, to obtain rustic and tasty loaves, or in omelettes, to vary color and consistency.

Black olive pâté is the ideal base for tasty and original appetizers. Here are some examples: spread on savory biscuits alternating with a layer of ricotta, on canapés with tuna cream and capers, on croutons with crumbled almonds or with an artichoke in oil placed on top, on bruschetta with a slice of salmon or a simple anchovy and some wild fennel.
