  • How Trapani Pesto is produced

    Trapani-style Pesto is produced from a base of chopped tomatoes, dried tomatoes and almonds. These ingredients are cold ground in order to preserve the natural characteristics and aromas present in fresh products. We then add Frantoi Cutrera extra virgin olive oil to the recipe. This pesto has a red colour, aromatic notes of dried tomato, balanced by the fresh flavor of basil, a dense and creamy consistency alternating with the crunchiness of Sicilian almonds.

Tomato is a food rich in nutrients, especially potassium, phosphorus, vitamin C, vitamin K and folate. It has an antioxidant action thanks to the presence of lycopene, helps reduce cellular aging and blood pressure, stimulates diuresis and digestion. Almonds, on the other hand, are considered a super food: they are in fact an excellent source of vegetable proteins, B vitamins, vitamin E, unsaturated fats (the so-called "good fats"), fiber and mineral salts. They also represent one of the richest natural sources of calcium, magnesium and phosphorus, the very same elements that form bones, contributing to their well-being.

Pesto alla trapanese is a real pesto and as such it can be used on crostini and bruschetta or used to season pasta, in particular trofie, busiate and spaghetti. To season pasta, we recommend diluting and sautéing the pesto with a little pasta cooking water to make the sauce more homogeneous.

This pesto is ideal for preparing an aromatic pasta dish. We recommend trofie or busiate, if possible homemade and rustic, for an optimal result. This pesto is ready to taste as it is and you just need to dilute it in very little pasta cooking water to obtain a creamy and intense sauce.

Our Trapanese Pesto is very similar to pistachio and almond pesto. These types of pesto are in fact widely used in Sicily but each area has its own tasty variations. Our Trapani-style pesto has among the main ingredients tomato pulp and concentrate, dried tomatoes, basil, almonds, garlic, oregano, chilli pepper and extra virgin olive oil. The pistachio and almond pesto is instead prepared with pistachio, almonds, extra virgin olive oil, “Cosacavaddu” cheese, sugar, salt, black pepper and nutmeg.
