This pesto represents some of the excellences and typical features of our territory, the Iblei Mountains: almonds, spontaneous wild fennel, tomato, semi-mature Cosacavaddu Ibleo cheese and obviously our extra virgin olive oil from olives harvested in our olive groves.

  • How Ibleo pesto & bruschetta with wild fennel is produced

    Ibleo Pesto & Bruschetta is produced from a base of dried tomatoes, wild fennel and Sicilian almonds. These ingredients are ground at very low temperatures in order to preserve the natural characteristics and aromas present in fresh products. In the recipe we then add Frantoi Cutrera extra virgin olive oil, sugar, almonds, oregano, chilli pepper. This original pesto has a bright red colour, intense aromatic notes of wild fennel and dried tomato, a dense and creamy consistency alternating with the crunchiness of almonds.

Dried tomatoes are very rich in mineral salts, especially zinc, copper, calcium, phosphorus and potassium. Provitamin A, which has many beneficial functions for the body, is more present in dried tomatoes than in fresh ones. And lycopene, which is preserved very well even in the dried product, together with vitamin C prevents the formation of bad cholesterol. Wild fennel, an aromatic herb that grows spontaneously in many areas of Sicily, in addition to being very fragrant, has precious carminative (i.e., absorbs and eliminates gas from the intestine), antioxidant and anti-inflammatory properties.

Ibleo Pesto & bruschetta with wild fennel is a real pesto and as such can be used on crostini, spread on pizza or used to season pasta. However, its original taste and the aromatic touch given by wild fennel also make it the ideal condiment for gourmet and original recipes. For example, it can form the basis of tasty bruschetta with anchovies in oil or the accompaniment of second courses based on white meat.

Wild fennel is typical of many areas of Sicily where it grows spontaneously, often on the edges of fields. Its scent is intense and unmistakable. The "barbettes" of the plant are mainly used, i.e. the filaments that make up the leaves, for example to season the famous pasta with sardines. But the stems are also very popular for flavoring omelettes or simply blanched and gratinated in the oven.

In addition to the classic pasta with sardines, wild fennel can be used to flavor and season vegetable soups, especially based on leeks or fennel, Sicilian chicken, meatballs, sea bass, tartare and omelettes. Due to its fresh taste and intense aroma it can also be used to flavor water and summer herbal teas. A traditional Sicilian recipe involves the use of this pesto as a condiment for pasta together with crumbled sausage.
