  • How Segreti di Sicilia extra onion jam is produced

    Our extra onion jam is produced from Sicilian onions cooked at low pressure and low temperature (around 60°C) to preserve the characteristics and natural aromas of the raw material. Glucose syrup, cane sugar and vinegar are added to the onions to obtain the typical sweet-sour flavour. The jam is ocher in colour, with light aromatic notes of onion and vinegar. The consistency is creamy and dense and the flavor well balanced. Onions make up 95% of the compote.

We use innovative cooking and preservation techniques that guarantee absolute respect for the original recipe and, at the same time, the preservation of all the organoleptic characteristics of the fresh product and its main nutritional aspects. The absence of preservatives and colorings allows you to taste a genuine product.

The onions we use for our Segreti di Sicilia jam are grown in Sicily. The variety chosen for this recipe has particular aromatic notes and an intense sweetness which allows for an excellent sweet and sour contrast. Onions are a typical food of our gastronomic tradition and are used in many recipes. They are also excellent health allies because they contain enzymes that help digestion and metabolism, useful trace elements such as iron, potassium, magnesium, fluorine and phosphorus and vitamins in abundance. Furthermore, they contain glucosinolates, substances responsible for the strong odor but also antimicrobial and protective for our body.

The Segreti di Sicilia extra onion jam is perfect in combination with cheeses, especially goat's, fresh cow's milk and blue cheeses. It can also be used on croutons for an aperitif or as an accompaniment to meat-based main courses. Also excellent in gourmet sandwiches, for example with hamburger and cheese, and in salads with tomatoes, rocket and tuma.

Generally, sweet and creamy cheeses go well with compotes and jams with a sour taste, while sweet compotes and jams go better with mature ones. For example, soft, sweet and fresh cheeses such as ricotta and robiola go well with acidic jams such as lemon, orange and mandarin jams, or wild berry jam. Hard, mature cow's milk cheeses such as Grana Padano or Parmigiano Reggiano go well with pear jam, goat's cheese with raspberry, fig and apricot jam or orange and mandarin jam, pecorino cheese with lemon jam and green tomato jam or of onion.

According to our traditional recipe, the onion jam is prepared by stewing the onions at a low temperature and then completing the cooking with vinegar and sugar to obtain the right balance of sour and sweet which makes this compote perfect for a cheese platter. To be served as an aperitif or at the end of a meal.
