Monocultivar Tonda Iblea IGP is the extra virgin olive oil obtained from Tonda Iblea olive groves, a typical variety of south-eastern Sicily. It is one of the prized native Sicilian cultivars and one of the most appreciated for the production of extra virgin olive oil.

    Produced in Italy. Monocultivar Tonda Iblea PGI is a medium-intense fruity oil, produced from Tonda Iblea olives, a typical variety of the Iblei Mountains, in south-eastern Sicily. From centuries-old olive groves, facing south, at 350-450 meters above sea level.

    The Tonda Iblea variety has always grown spontaneously in the south-eastern area of ​​the island. In particular, in the area of ​​the Iblei Mountains, from which it takes its name, which are located between the provinces of Ragusa and Syracuse (but there are also examples in the territories of Trapani and Agrigento). Its ideal habitat is the hill and it grows luxuriantly up to 600 meters above sea level.

The extra virgin with a varied bouquet

In the past, mainly table olives were obtained from the Tonda Iblea variety. Its use for oil production is relatively recent but very satisfactory. So much so that this variety is now the basis of a prized Sicilian DOP which, as Frantoi Cutrera, we have contributed to obtaining. The oil obtained from it has a very intense fruitiness. The bouquet of scents is varied: tomato, cut grass and aromatic herbs are clearly noticeable. The bitter taste is very light while the spiciness is well present and evident. These characteristics make it the perfect ally for the preparation of vegetables, salads and for seasoning fish-based dishes.

The quality of our Monocultivar Tonda Iblea PGI is born in the field but is refined in the oil mill thanks to our incessant research work. By combining study and experience, we have in fact created an innovative system that allows you to set, and therefore manage, every single process of the production plant based on a (secret) "recipe" personalized by cultivar, origin and state of ripeness. Thus we can standardize and enhance the organoleptic properties of each olive variety, drawing only the best from each and thus creating our special blends.

The Tonda Iblea olive variety, one of those that gives life to the prized Monti Iblei PDO, is typical of the vast limestone plateau of south-eastern Sicily which is also our home. We are in the hinterland of the provinces of Syracuse and Ragusa: here, olive trees of this variety have grown spontaneously for millennia among vast plateaus and deep valleys. Centuries-old plants are predominant and alternate with new plants, covering the hills together with carob trees, almond trees and vines. The trees are very vigorous with generally very dense foliage. The fruit has an excellent ratio between stone and pulp and productivity is medium. The fruit is large and fleshy.

Monocultivar Tonda Iblea PGI oil is produced in our factories starting from olives that arrive directly from our olive groves in the Ragusa area, but also from our suppliers in the Syracuse area. We only promote growers capable of providing high quality local raw materials, grown organically. And above all, we support small production: we maintain an intrinsic bond with the local community made up of olive growers and small producers who give our mills the best of their production. With a view to sustainable development and with an important added value for the territory.

Monocultiva Tonda Iblea PGI can be recognized by the appropriate brand on the packaging. It guarantees that the oil has been produced according to the specifications established by the "Consortium for the valorisation and protection of extra virgin olive oil PGI Sicily". In addition to the high quality standards (the same ones we follow for all our products), the specification requires that the oil be pressed within the Sicilian territory and only from olives grown on the island. A standard that we also follow for all the other extra virgin olive oils we produce.
