    Origin
    Frescolio is an extra virgin olive oil obtained from olives of the Moresca and Biancolilla varieties, harvested in young and centuries-old olive groves in south-eastern Sicily, at 200-400 meters above sea level. Molito and bottled the same day to be shipped immediately.


    Extraction
    Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled "cold" temperature (<27°C).

    Perfume
    fresh and intensely fruity with the characteristic notes of freshly produced oil, freshly cut grass, fresh aromatic herbs and green almond.


    Flavor / Aroma
    full-bodied, full and enveloping, with notes of fresh herbs, pronounced spiciness and bitterness.


    Use
    raw on freshly baked bread, with salt and oregano, ideal on bruschetta, legume soups and grilled buffalo meat. Excellent on typical winter dishes

  • How Frescoli was born

    Frescoli is produced from olives harvested the same day and immediately pressed. The oil is bottled immediately to be shipped within a few days. This instantaneous conservation method also allows those who have never been to the oil mill to taste the new oil as if it had just been pressed. We define it as “oil mill mouth”. The color is a vigorous, almost indescribable green (and for this we use a transparent bottle); the taste is intense and spicy. The edition is limited: it can only be found for a few months of the year and only during production.

Frescoli is not only the first extra virgin olive oil of the new olive oil vintage. It is also our way of sharing with everyone the celebration that we feel here in Sicily, tasting the new oil, a long-awaited moment. The best way to enjoy Frescolio is to taste it on a slice of warm bread, with a pinch of oregano and salt (the mix is ​​already found in the package). Its taste is also surprising on legumes and, of course, on bruschetta. In particular those with garlic, tomato and anchovies.

Frescolio extra virgin olive oil is bottled on the spot, immediately after being pressed. We do this through a particular and innovative procedure that allows the oil to never come into contact with oxygen so as not to oxidize. It thus keeps intact not only its organoleptic characteristics but also the intensity and spiciness that characterize in particular the oil that has just come out of the "mouth" of the mill.

Frescoli is at its best as it is. The best way to taste it to appreciate all the intense flavor of freshly pressed oil is on a slice of hot bread seasoned with salt and oregano. This is the way in which new oil was traditionally tasted in Sicily, as soon as it came out of the "mouth" of the mill. Another classic use is on legumes while a more modern but equally surprising use is on grilled buffalo meat. However, it is excellent on all typical winter dishes.

Our olives are only and strictly Sicilian. Many come from our own olive groves, others from suppliers in our network who we choose carefully and who share our same values ​​of quality and sustainability and who grow organically.
