    Blend of Moresca, Tonda Iblea, Biancolilla and Nocellara varieties, harvested in south-eastern Sicily at 200-400 meters above sea level, from young olive groves in hilly and flat areas close to the sea. With the addition of natural rosemary flavouring.

    Solely mechanically, in a latest generation oil mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled "cold" temperature (<27°C).

To flavor our special Selezione Cutrera blend we only use natural Sicilian rosemary flavour. Rosemary is an aromatic herb typical of all Mediterranean areas. The most widespread and used variety in Sicily is particularly aromatic and fragrant and, together with basil, is always present in vegetable gardens and balconies. When the plant is in full bloom it hosts the industrious bees, thus contributing to the birth of the tasty Sicilian wildflowers. The essence is extracted from the needles of fresh rosemary through natural methods that allow all the organoleptic characteristics of the rosemary to be kept intact and, obviously, all the taste and aroma to then be found intact in the dish.

Dressing based on extra virgin olive oil flavored with rosemary can be used in all dishes where you want to add the scent, aroma and spiciness of rosemary together with the oil-based dressing.
