    Our anchovy sauce with fennel is produced by lightly sautéing onion in Frantoi Cutrera extra virgin olive oil. To this, the tomato sauce and the other ingredients are added, including the wild fennel and garlic, in a low pressure pan to preserve the organoleptic characteristics of all the raw materials. The sauce has a bright red color, with aromatic notes of tomato, anchovies, fennel and garlic. The flavor is sweet and slightly spicy.

For our Segreti di Sicilia anchovy sauce with fennel we choose Cantabrian anchovies because, in addition to being very tasty, they have more compact flesh that does not fall apart during cooking. Anchovies are rich in Omega3 (up to 11 grams per 100 of product). These fats play a very important role against the accumulation of cholesterol in the blood and therefore in the prevention of arterial hypertension and cardiovascular diseases. Wild fennel, an aromatic herb that grows spontaneously in many areas of Sicily, in addition to being very fragrant, has precious carminative (i.e., absorbs and eliminates gas from the intestine), antioxidant and anti-inflammatory properties.

The Segreti di Sicilia anchovy sauce with fennel can be consumed naturally, without further processing. Just heat it for two minutes in a saucepan over low heat and season the pasta directly on the plate. To be finished only with a drizzle of extra virgin olive oil and flavorings to taste, such as fresh fennel and chopped toasted almonds.

The Segreti di Sicilia anchovy sauce with fennel is ready to be used, no cooking or preparation is required. To season a classic pasta dish, this sauce should only be heated slightly over low heat. For a more homogeneous result you can heat the sauce in a pan, thin it slightly with a few tablespoons of the pasta cooking water. Finally, sauté the pasta while it is still al dente in the pan together with the sauce.

According to our traditional recipe, the sauce with anchovies and fennel is prepared starting from a sautéed onion in which the tomato puree is then cooked together with the anchovy fillets, fennel and other Sicilian herbs. You can prepare the anchovy and fennel sauce starting from a base such as our ready-made organic cherry tomato sauce, our Cantabrian anchovy fillets in extra virgin olive oil.
