Frequently asked questions about extra virgin olive oil

What is extra virgin olive oil?
It is an oil obtained exclusively through mechanical, cold-pressed processes from healthy olives. To be classified as extra virgin, it must have an acidity of less than 0.8% and pass very rigorous organoleptic and chemical tests.

How do I recognize a good extra virgin olive oil?
Always check the origin, production date, and certifications. A quality extra virgin olive oil has herbaceous aromas, a balanced flavor, fruity notes, and a slight bitterness or spiciness. Be wary of overly neutral or cheap oils.

Why are some oils more bitter or spicy?
It's a sign of quality: the bitter and pungent tastes are caused by the presence of polyphenols, natural antioxidants that are valuable for health. Our oils, such as Mille or Primo DOP, are naturally rich in polyphenols.

DOP (Protected Designation of Origin) and IGP (Protected Geographical Indication) certify the origin of the olives and compliance with strict specifications. ORGANIC indicates that the olives are grown without the use of chemicals or pesticides.
